Over the years we’ve had plenty of get-togethers with family and friends, enjoyed some get meals and BBQs at the cottage…and shared a bunch of recipes that are really tasty!

So in the spirit of sharing, I like to post some of these recipes for everyone to enjoy.

    Mains

    Deviled Steak Crepes

    Ingredients: 

    1. 1½ lbs beef round steak.
    2. ¼ cup flour
    3. 1 small onion, chopped
    4. 1 clove garlic, minced
    5. 3 tbsp cooking oil
    6. ½ cup water
    7. 1 (8 oz) can tomato sauce
    8. 2 tbsp vinegar
    9. 2 teaspoons horseradish
    10. 2 teaspoons prepared mustard
    11. ½ teaspoon salt
    12. ¼ teaspoon pepper
    13. 10 to 12 warm cooked crepes

    Directions:

    1. Cut meat into thin st4rip and coat with flour.
    2. In a skillet, brown meat, onions, and garlic in 3 tbsp hot cooking oil.
    3. Stir in water, tomato sauce, vinegar, horseradish, mustard, salt, and pepper.
    4. Cover mixture and simmer for 45 to 50 minutes until meat is tender.
    5. Fill warm crepes with meat mixture; fold over and serve immediately.
    6. Makes 10 to 12 crepes.
    Hamburger and Cabbage Casserole

    Ingredients

    • 2 tbsp. chopped onion
    • 2 tbsp butter
    • ½ lbs hamburger
    • 2 ½ cups shredded cabbage
    • ½ tsp. salt
    • ¼ tsp pepper
    • 1 can tomato soup

    Directions

    • Brown onions in 2 tbsp butter.
    • Add hamburger and coo until meat has browned thoroughly.
    • Place 1 cup cabbage in the bottom of a casserole dish and cover with meat mixture.
    • Top with remaining cabbage, salt and pepper.
    • Pour tomato soup over top of casserole and spread evenly.
    • Cover and bake at 350oF for about 30 minutes or until cabbage is cooked.

      Meatballs Supreme

      Ingredients

          1. 1 lbs lean ground beef
          2. 1 egg, beaten
          3. 1 tsp. sugar
          4. ¼ tsp. allspice
          5. ¼ tsp pepper
          6. ½ tsp salt
          7. 1 slice of stale bread
          8. ½ lbs. mushrooms, chopped
          9. ½ cup milk
          10. ½ cup chopped onions
          11. 3 tbsp. butter
          12. ¾ cup chopped onions
          13. 2 tbsp flour.
          14. 1 tbsp tomato paste
          15. 1 cup undiluted consommé
          16. ½ cup sour cream
          17. ½ tsp salt

      Directions

          1. Mix first 6 ingredients together
          2. Break up bread and soak in milk, then add to meat mixture.
          3. Add ½ cup chopped onions to meat mixture and mix well.
          4. Form meat mixture into small balls.
          5. Cook slowly in a lightly greased frying pan for 30 minutes, until lightly browned and well cooked.
          6. Add ¾ cup chopped onions and brown (about 10 minutes)
          7. Remove from heat.
          8. Mix together the flour, tomato paste and Consomme. Return to heat and stir until mixture has thickened.
          9. Add mushrooms to sauce mixture and simmer for about 5 minutes.
          10. Stir in sour cream and salt.
          11. Pour over meatballs and serve.

      Sweet and Sour Sausages

      Ingredients

      1. 1 lbs. sausages
      2. Carnation Milk
      3. Bread Crumbs

      Sauce:

      1. ¼ cup Ketchup
      2. ¼ cup Vinegar
      3. 3 tbsp. brown sugar

      Directions

      1. Preheat oven to 350oF
      2. Dip sausages in carnation milk and roll in bread crumbs.
      3. Place in a baking dish in a single layer.
      4. Cover and bake at 350oF for 30 minutes.
      5. Uncover baking dish and continue to bake for an additional 10 minutes.
      6. Bring sauce ingredients to a gentle boil and pour evenly over the sausages.
      7. Cover the sausages in sauce and bake for a final 15 minutes.

      Beer Chilli

       Ingredients 

      1. large onion, finely chopped
      2. 2 jalapeño peppers, seeded and finely chopped
      3. 2 tablespoons (30 ml) olive oil
      4. 3/4 lb (375 g) ground pork
      5. 3/4 lb (375 g) ground beef
      6. 3 tablespoons (45 ml) chili powder
      7. ½ teaspoon (2.5 ml) ground cumin
      8. ¼ teaspoon (1 ml) Cayenne pepper, or more
      9. 2 cloves garlic, finely chopped
      10. 1-bottle (341 ml) beer of your choice
      11. 1 can 28 oz (796 ml) diced tomatoes
      12. 1 can 19 oz (540 ml) white beans, rinsed and drained
      13. 1 tablespoon (15 ml) cocoa powder
      14. Salt and pepper to taste

      Directions

      • In a saucepan, brown the onion with the peppers in the oil.
      • Add the meat and spices and continue cooking until the meat is golden brown.
      • Season with salt and pepper.
      • Add the garlic and cook for 1 minute.
      • Deglaze with the beer and add the remaining ingredients.
      • Bring to a boil and simmer gently, uncovered, for about 45 minutes, stirring frequently.
      • Adjust the seasoning if desired.
      • Serve with rice, over nachos, in chilidogs, or in the Three-Cheese Potato Skins.

       

      I wish that my room had a floor. I don’t care so much for a door. But this walking around without touching the ground is getting to be quite a bore.

       

      Mr. Murls Sausage and Gravy

      Ingredients

      1. 1 lbs. ground pork sausage (or ground beef)
      2. 2 tablespoons butter (Or cooking)
      3. 1/3 cup of flour.
      4. 3 cups milk
      5. ¼ teaspoon garlic powder
      6. ¼ teaspoon seasoned salt
      7. ¼ table salt (More to taste)
      8. 1 teaspoon black pepper (More to taste)

      Directions

      • Brown sausage in large skillet over medium heat until no longer pink.
      • Add Butter (or oil) to the pan and stir in until well mixed.
      • Sprinkle the flour over the sausage and stir for 2 minutes
      • Slowly pour the milk into the sausage / flour mixture, whisking constantly until smooth.
      • Whisk in the seasonings.
      • Taste the gravy and adjust seasoning if necessary.

      Blue Cheese Mushrooms

      Ingredients

      1. 24 medium size fresh mushrooms
      2. ¼ cup sliced green onion
      3. 1 tbsp butter or margarine
      4. 1 (4oz.) pkg. crumbled blue cheese
      5. 3 oz. softened cream cheese.

      Directions:

      1. Preheat broiler
      2. Remove stems from mushrooms.
      3. Chop mushroom stems
      4. Cook and stir stems and onions in butter in a small skillet on medium heat until tender.
      5. Add Blue cheese and Cream cheese to mushroom and onion mixture and mix well.
      6. Spoon mixture evenly into mushroom caps.
      7. Broil for 2 – 3 minute or until golden brown
      8. Serve warm.

      Makes 2 dozen mushroom caps

      Heavenly Ham Roll-Ups

      Ingredients: 

      1. 1 pkg. (9 oz.) Shaved smoked ham. (30 slices)
      2. 5 tbsp softened cream cheese spread
      3. 15 asparagus spears (About 1 lbs) trimmed

      Directions:

      1. Preheat oven to 350oF
      2. Flatten ham slices and pat dry.
      3. Stack ham in piles of 2 slices each.
      4. Spread each stack with 1 teaspoon of cream cheese spread.
      5. Place 1 asparagus spear on one of the long sides of each ham stack and roll up.
      6. Place ham rolls in a 13” x 9” baking dish.
      7. Bake at 350oF for 15 to 20 minutes until heated through.

      Make 15 servings

      Desserts

      All – Purpose Crepes

      Ingredients: 

      1. 2 egg yolks
      2. 2 whole eggs
      3. 1/8 teaspoon salt
      4. 1 cup flour
      5. ½ cup milk
      6. ½ cup water
      7. 1 tbsp melted butter 

      Directions: 

      1. In a medium mixing bowl, combine whole eggs and egg yolks.
      2. Gradually add in flour alternatively with milk, beating with an electric mixer or whisk until smooth.
      3. Beat in oil.
      4. Refrigerate batter for at least 1 hour.
      5. Cook on up-side down crepe griddle or in a traditional crepes pan.
      6. Makes about 25 to 30 crepes.
      Lintzer Torti

      Ingredients Enough for 2 pie plates

      • ¼ lbs walnuts or hazelnuts (Ground)
      • 1 cup white sugar
      • 2 cups flour (Level 8 oz. cups)
      • 1/3 lbs soft butter or margarine
      • 3 tsp. cinnamon
      • 1 egg
      • Pinch of salt
      • Raspberry or plum jam (See qty. below)

      Ingredients enough for Cookie Sheet Quantities

      • 1/2 lbs walnuts or hazelnuts (Ground)
      • 2 cup white sugar
      • 4 cups flour (Level 8 oz. cups)
      • 2/3 lbs soft butter or margarine
      • 6 tsp. cinnamon
      • 2 egg
      • Pinch of salt
      • Raspberry or plum jam (See qty. below)

      Instructions

      • Mix together to form dough.
      • Line 2 pie plates with dough.
      • Form remaining dough into rectangles.
      • Cut rectangles into strips for top of pie.
      • Fill each shell with ¾ cup of raspberry or plumb jam.
      • Place strips of dough on top of pies.
      • Bake at 400oF for 15 minutes.
      • Reduce heat to 300oF
      • Bake until nicely coloured (15 – 20 minutes)

      Notes:

      1. Can also be made on cookie sheet and cut into 4-inch squares.
      2. Any remaining dough can be used for cookies.

      Oatmeal Lace Cookies

      Ingredients

      1. 1 cup (2 sticks) of butter.
      2. 2 ¼ cups light brown sugar, packed.
      3. 2 ¼ cups rolled oats
      4. 3 tablespoons all purpose flour.
      5. 1 teaspoon salt
      6. 1 egg, lightly beaten
      7. 1 teaspoon vanilla. 

      Directions

      1. Preheat oven to 375oF
      2. Line baking sheets with parchment paper.
      3. Heat butter and sugar in a 2 quart sauce pan over medium heat, stirring frequently with a wooden spoon until butter has melted and mixture is smooth.
      4. Stir in oats, flour salt and egg.
      5. Drop cookie batter, by teaspoon, onto prepared baking sheets. Leave about two inches between each cookie to allow them to spread.
      6. Bake 5 to 7 minutes watching closely to prevent them from over baking. The lace cookies should be golden brown.
      7. Remove cookies from over and allow to cool on cookie sheet for about 30 seconds and then remove onto cooling racks to allow them to cool completely.
      8. Store in an air-tight container.

      Scotch Shortbread

      Ingredients

      1. 2 ½ cups sifted bread flour
      2. ½ cup plus 2 tbsp granulated sugar
      3. ½ tsp. salt
      4. 1 cup (1/2 lbs, 2 sticks) butter.

      Directions

      1. Sift first 3 items into a large bowl.
      2. Cut up butter into the flour mixture and kneed it by hand until mixture makes a large ball and comes away clean from the sides of the bowl.

      This takes about 15 minutes.

      1. Roll about ¼” inch thick. And cut with a pastry cutter
      2. Bake on ungreased cookie sheet for 30 minutes at 350oF
      3. Coo0l on cookie sheet
      4. Served with chilled Port or Sherry

      Notes:

      1. Butterscotch cookies can be made by substituting 1 cup sieved brown sugar
      2. Roll ½” to 1” inch thick.
      3. Bake at 300oF for 45 to 60 minutes.

      Cheesecake

      Ingredients

      1. 2 cups graham cracker crumbs
      2. 3 tbs sugar
      3. 3 tbs butter
      4. 1 lbs. creamed cottage cheese
      5. ¼ cup flour
      6. Juice from 1 lemon
      7. 1 tsp lemon rind
      8. 1/8 tsp salt
      9. 4 eggs separated (Save egg whites and yolks)
      10. 1 cup sugar
      11. 1 cup cream, whipped

      Directions

      1. Preheat oven to 350oF
      2. Combine 1st three ingredients (graham cracker crumbs, sugar, butter) and set aside ¾ cup of mixture.
      3. Line bottom of 8” spring form pan.
      4. Put cottage cheese through a sieve to cream, stir in flour lemon juice, lemon rind and salt.
      5. Beat egg yolks and add to 1 cup sugar. Mix well
      6. Combine egg yolks and sugar with cottage cheese mixture.
      7. Fold in whipped cream and stiffly beaten egg whites.
      8. Turn mixture into 8” pan
      9. Top with remaining crumb mixture and bake for 60 minutes.

      The Zodiac

      The study of astrology dating back over 5000 years has become very popular today. Astrologists claim that the position of the sun, moon, and planets at the time of a person’s birth determine the person’s potential and characteristics.

      There are twelve individual parts to the zodiac, each of which is named for an ancient star constellation and represented by a characteristic symbol.       • Float Iced fruit garland in bowl if desired.
      • Garnish with mint leaves.

      Make 40 – ½ cup servings.

       

      Pisces Zodiac Punch

      • To serve, pour mixture over a block of ice in a large punch bowl.

      Aries Zodiac Punch

      5. 32 oz. white rum.
      6. 2 large bottles of cold club soda.

      Directions:

      • In a large container mix lemonade concentrate, grapefruit juice concentrate, can fruit cocktail (Drained) and white rum.
      • Chill for 2 hours
      • Pour over ice in punch bowl.
      • Add cold club soda.
      • Stir gently and serve 

      Serves 20 people twice or 1 person 40 times

      Gemini Zodiac Punch

      Date:  May 21 – June 21
      Birth Sign:  GEMIN
      Birth Symbol:  The Twins

      Ingredients:

      1. 3 quarts cold tomato juice

      7. Block of ice.

      Directions:

      • In a large container combine cold tomato juice, light rom, Worchestershire sauce, lemon or lime juice, salt and pepper.
      • Pour punch over block of ice in punch bowl,
      • Garnish with thinly sliced lemons or lime.
      • Serve with ice cubes in punch cups or on-the-rocks

      Cancer Zodiac Punch

      Date: June 22 – July 22
      Birth Sign:  CANCER

      Ingredients:

      1. 3 pineapples (Peeled, cored and crushed or sliced)

      6. 4 cups (32 oz.) white rum
      7. 4 bottles champagne.
      8. Coarsely crushed ice. (In punch bowl)

      Directions:

      • In a large container dissolve powered sugar in lemon juice.
      • Add pineapple, curacao, cherry juice and white rum.
      • Chill for two hours.
      • Pour mixture over ice in punch bowl.
      • Add in 4 bottles of cold Champagne. 

      Serves 20 people twice or 1 person 40 time

      Leo Zodiac Punch

      Date:  July 23 – August 22

      Directions:

      • In a large container, mix pineapple, lemon juice, pineapple juice and rum.
      • Chill two hours.
      • Pour mixture over ice in punch bowl.
      • Add club soda and sliced strawberries.
      • Stir gently and serve 

      Serves 20 people twice or 1 person 40 times

      Virgo Zodiac Punch

      Date:    August 23 – September 22

      Ingredients:

      1. 1 can (6 oz.) frozen lime juice

      6. 2 teaspoons bottled lime juice
      7. 15 – 20 ice cubes.
      8. Mint leaves
      9. Cherries with stems 

      Directions:

      • Combine all ingredients in punch bowl and mix well.
      • Just before serving add the ice cubes.
      • Serve in punch cups garnished with fresh mint or lemon leaves and a red cherry on stem.

      Serves 12 people

      Libra Zodiac Punch

      Date: September 23 – October 22
      Birth Sign: LIBRA
      Birth Symbol:  The Scales
      Ruling Planet:  VENUS
      Birth Stone:  Sapphire
      Lucky Day: Friday
      Lucky Numbers:  6 and 4

      Ingredients:

      1. 1 cup lime juice (Bottled)
      2. ½ cup granulated sugar
      3. 2 quarts spanking water.
      4. 1 pint lime sherbet
      5. 1 quart pineapple sherbet
      6. Juice form 1 lime
      7. Lime slices
      8. Mint leaves

      Directions:

      • In a blender, combine lime juice and sugar until sugar is dissolved.
      • Add 1 quart of sparking water and juice from 1 lime. Blend thoroughly.
      • Put all ingredients from the blender into a punch bowl and add the 2nd bottle of sparking water.
      • Just before serving, add the lime and pineapple sherbet.
      • Garnish with lime slices and mint leaves.

      Make 3 quarts

      Scorpio Zodiac Punch

      Date:  October 23 – November 22]
      Birth Sign:   SCORPIO

      Ingredients:

      1. Strawberry slices
      2. ½ cup maraschino cherries, sliced in half.
      3. ½ bottle each of cognac
      4. ½ bottle maraschino cordial
      5. 2 bottles dry white wine
      6. 4 jiggers grenadine (1 jigger = 1½ oz.)
      7. 2 bottles champagne
      8. 2½ quarts sparkling water 

      Directions:

      • Place a block of ice in a large punch bowl
      • Add the strawberries and cherries
      • Add liqueurs, wine grenadine and mix thoroughly.
      • When ready to serve add in the champagne and sparkling water.
      • Stir thoroughly 

      Serves approximately 20 people

      Sagittarius Zodiac Punch

      Date:   November 23 – December 21
      Birth Sign:  SAGITTARIUS

      Ingredients:

      1. 14 oz. pineapple juice, chilled
      2. ¾ cup sugar
      3. 6 oz. can, frozen pink lemonade, concentrated.
      4. 2¼ cups water
      5. 1 – quart strawberry ice cream
      6. 2½ quarts ginger ale.

      Directions:

      • In a punch bowl, combine pineapple juice, sugar, lemonade concentrate (Defrosted) and water. Mix thoroughly.
      • Add ice cream and stir until blended.
      • Stir in ginger ale.
      • Serve at once.

       Serves approximately 15 people.

       

      Capricorn Zodiac Punch

      Date:  December 22 – January 19
      Birth Sign:  CAPRICORN
      Birth Symbol: The Goat
      Ruling Planet:  SATURN

      Lucky Day:  Saturday
      Lucky Numbers:  7 and 8

      Ingredients:

      1. 1 quart eggnog mix
      2. ½ bottle light rum
      3. 1 cup whipped – heavy cream
      4. Nutmeg

       Directions:

      • Pour eggnog into punch bowl
      • Pour in light rum and stir.
      • Fold in whipped – heavy cream
      • Chill in refrigerator.
      • Stir
      • Top individual servings with nutmeg.

      Serves 12 people.

       

      Cocktails

      Polar Bear
      1. 1 oz. Vodka

      1. 40 oz. cold beer (approx. 4 bottles)
      2. 40 oz. cold lemonade
      3. Crushed ice.

      Directions:

      • Place crushed ice into 3-quart container
      • Pour cold lemonade into container over ice.
      • Pour cold beer into container over ice.
      • Gently stir until blended.

      Sangria Wine Punch
      1. 6 bottles of medium dry red wine
      2. ½ lbs of red grapes
      3. ½ lbs. of white grapes
      4. 8 oranges
      5. 3 bananas
      6. 2 apples
      7. 2 lemons
      8. 1 small bottle of brandy
      9. 2 cups sugar
      • Cut fruit into wedge sections or slices
      • Cover with brandy and sugar. Let sit in the refrigerator for two hours.
      • Add wine and serve.
      • Ife served as a punch, place a large piece of ice in the punch bowl before adding the mixture.
      • Sangria may also be served in large pitchers after being chilled.
